til at drive hotelbranchen mod en mere b\u00e6redygtig fremtid.  <\/strong><\/h2>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">Et af fokusomr\u00e5derne er den store m\u00e6ngde madspild, som er et stadig st\u00f8rre problem for industrien, milj\u00f8et og \u00f8konomien.<br \/>\nDet danske ministerium fandt ud af, at   <\/span><a href=\"https:\/\/mst.dk\/service\/publikationer\/publikationsarkiv\/2014\/okt\/kortlaegning-af-madaffald-i-servicesektoren\/\"><span style=\"font-weight: 400;\">60.800 tons madaffald stammer alene fra restauranter og caf\u00e9er<\/span><\/a><span style=\"font-weight: 400;\">.<br \/>\nHotels are also a key producer of waste, generating around   <\/span><a href=\"https:\/\/www.greenhotelier.org\/our-themes\/waste-management\/#:~:text=A%20hotel%20guest%20generates%20about,waste%20disposal%20becomes%20more%20expensive.\" class=\"broken_link\"><span style=\"font-weight: 400;\">1 kg affald pr. nat pr. g\u00e6st<\/span><\/a><span style=\"font-weight: 400;\">.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">Hvorfor er h\u00e5ndtering af madspild s\u00e5 stort et problem?<br \/>\nHer er nogle af de st\u00f8rste udfordringer, som hotel- og restaurationsbranchen st\u00e5r over for i dag:   <\/span><\/p>\n<p>&nbsp;<\/p>\n<h3><strong>#1 Svingende affald afh\u00e6ngigt af h\u00f8j- eller lavs\u00e6son  <\/strong><\/h3>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">Inkonsekvens i affaldsstr\u00f8mmene g\u00f8r overv\u00e5gning og planl\u00e6gning vanskelig for ejere og operat\u00f8rer af restauranter\/hoteller.<br \/>\nEt svingende affaldsm\u00f8nster f\u00f8rer til afhentning af containere for tidligt eller for sent.<br \/>\nI mange tilf\u00e6lde resulterer det i overfyldte skraldespande og un\u00f8dvendige indsamlingsgebyrer.    <\/span><\/p>\n<p>&nbsp;<\/p>\n<h3><strong>#2 Overtilberedning af mad  <\/strong><\/h3>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">Overskydende f\u00f8devareproduktion er den st\u00f8rste \u00e5rsag til madspild og udg\u00f8r en \u00f8konomisk trussel for mange virksomheder.<br \/>\nUdgifterne til ingredienser og r\u00e5varer er de n\u00e6stst\u00f8rste faste udgifter i restaurationsbranchen, s\u00e5 tab p\u00e5 dette omr\u00e5de kan v\u00e6re \u00f8del\u00e6ggende.   <\/span><\/p>\n<p>&nbsp;<\/p>\n<h3><strong>#3 Eftersp\u00f8rgsel efter mere b\u00e6redygtig praksis  <\/strong><\/h3>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">Virksomhedsejere er ofte ikke klar over, hvordan de skal indf\u00f8re en mere b\u00e6redygtig og milj\u00f8venlig drift.<br \/>\nDet stigende pres fra kunderne for at levere etisk fremstillede ingredienser og arbejde mere b\u00e6redygtigt g\u00f8r, at mange restaurat\u00f8rer ikke ved, hvor de skal begynde. <\/span><\/p>\n<p>&nbsp;<\/p>\n<h3><strong>#4 Manglende kontrol med lagerbeholdning og kontrol med kundernes rester  <\/strong><\/h3>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">Uden temperaturoverv\u00e5gning og ordentlig uddannelse af personalet i forhold til f\u00f8devarers udl\u00f8bsdato bliver der bestilt for meget, og der opst\u00e5r un\u00f8digt madspild, n\u00e5r varer smides ud.  <\/span><\/p>\n<p>&nbsp;<\/p>\n<h3><strong>#5 Strengere lovgivning fra regeringen  <\/strong><\/h3>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">Strammere madspildspolitikker \u00f8ger presset p\u00e5 restauranter og hoteller for at foretage en \u00e6ndring, f.eks. har den britiske regering som m\u00e5l, at det skal v\u00e6re obligatorisk at  <\/span><a href=\"https:\/\/www.openaccessgovernment.org\/uk-government-legislation-food-waste\/83964\/\"><span style=\"font-weight: 400;\">Separat indsamling af madaffald inden 2023<\/span><\/a><span style=\"font-weight: 400;\">med et yderligere m\u00e5l om, at 75 % skal genbruges i 2030.  <\/span><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<h3><strong>IoT-innovationer, der giver nye ideer  <\/strong><\/h3>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">Der er ingen tvivl om, at der er behov for, at hotel- og restaurationsbranchen unders\u00f8ger mere effektive og b\u00e6redygtige styringssystemer til at h\u00e5ndtere madspild.<br \/>\nHotel- og restaurationsbranchen vender sig mod IoT-teknologi for at finde svar.<br \/>\nEn m\u00e5de at g\u00f8re det p\u00e5 er ved at begynde at optimere deres affaldsstr\u00f8mme, hvor m\u00e5ling og overv\u00e5gning er n\u00f8glen.<br \/>\nMan kan ganske enkelt ikke arbejde p\u00e5 at reducere spildet, f\u00f8r man ved, hvor meget der g\u00e5r til spilde.   <\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">Implementering af en IoT-drevet l\u00f8sning kan hj\u00e6lpe restauranter og hoteller med at holde styr p\u00e5 m\u00e6ngden af madspild.<br \/>\nEn   <\/span><a href=\"https:\/\/wastehero.io\/hardware\/smart-bin-sensor\/\"><span style=\"font-weight: 400;\">optisk smart bin-sensor<\/span><\/a><span
